Wholemeal or White Flour - 2 cup
Sugar - 3/4 cup
Baking soda - 2 teaspoons
Baking Powder - 2 teaspoons
pinch of salt
Mix the above ingredients together in a bowl
Golden Syrup - 2 tablespoons
Cooking Oil - 1/2 cup
Milk - 1/2 cup
Flavour (banana+choc/berries/apricot/etc)
Mix the dry ingredient in a bowl. Mix the wet ingredients in a seperate bowl.
Add the wet one to the dry one. Mix well and add more milk if needed to achieve a medium moist mixture.
Fill mixture into greased muffin cups 3/4 full. Bake at 180 degree celcius for 15-20 min until skewer comes out clean.

Peanut Brownies

Egg - 1
Butter - 125g (4 oz)
Sugar - 1 cup (180g)
Flour - 1 1/2 cup (270g)
Bakibng Powder - 1 teaspoon ( or 2 for fluffier and crispier texture)
Cocoa Powder - 2 dessertspoons
Peanuts - 1 cup (optional)
Salt - 1/2 teaspoon
Beat butter and sugar to cream. Add in egg, flour, baking powder, peanuts and cocoa (1 ingredient at a time).
Make into balls and squuze lightly to flatten on the baking tray.
Bake at 180 degree celcius (35o degree ferenheit) for 15 min.

Apple Sponge Cake
This is the recipe of the famous NZ home-bake dessert I fell in love with during my stay.
Apple (or any Fruit) Sponge Cake - best served hot with vanilla ice-cream or hot custard
Serves 4-6
Butter - 125g (4 oz)
Sugar - 125g (4 oz) - can subsitute with raw or brown sugar for healthier choice
Flour - 125g (4 oz)
Egg - 2
Fresh Milk - 2 tablespoons
Baking Powder - 2 teaspoons
Vanilla Essence - 1/2 teaspoon
Icing sugar - few pinches
First, prepare 2 cup of stewed fruits (prefer skinned and sliced apples in bite size. Boil in water until soft)
Place stewed fruits in an ovenproof dish. Sweeten with sugar to taste. Cover and keep hot.
Cream butter and sugar until pale and creamy.
Beat egg one at a time. Beat well after each addition.
Sift flour and baking powder together. Fold into creamed mixture.
Add milk and vanilla essence to mixture.
Spoon combined mixture over fruits in dish.
Bake at 190 degree celcius for 40min or till sponge springs back when lightly touched.
Dust with icing sugar and served hot with ice cream or hot custard.
